  • 500 grams fresh Awala (Indian Gooseberry)
  • 400 grams granulated sugar or Jaggery
  • 1 cup water
  • 1 teaspoon powdered or whole cardamom (optional, for flavour)

Instructions:

  1. Wash the Awala thoroughly under running water to remove any impurities. Pat them dry with a clean kitchen towel.
  2. With a sharp knife, carefully remove the stems from each Awala and make a small slit in the centre of each berry. This step helps the Awala absorb the flavors of the sugar syrup.
  3. In a large saucepan, combine the water and sugar, and heat over medium heat. Stir continuously until the sugar dissolves completely and the syrup starts to boil. If you prefer a thicker syrup, you can cook it for a few more minutes until it reaches your desired consistency.
  4. Add the prepared Awala to the sugar syrup and cook them on low heat. Allow the Awala to simmer gently in the syrup until they become soft and slightly translucent. This may take around 15 to 20 minutes.
